Amanda’s Taco Soup with Romaine Wraps

Amanda’s Taco Soup with Romaine Wraps

By September 2, 2014

Another great recipe from readers just like you! Amanda writes: "Before trying 4HB, I use to make this soup with dairy, but it's been modified to fit the 4HB mold and I love it! You can cook it in a slow cooker or in a large pot. I usually use a large pot."

Ingredients

Instructions

  1. Heat olive oil over medium heat in your large pot
  2. Saute onions
  3. Add ground turkey and brown with onions
  4. Add taco seasoning and fresh cilantro to pot
  5. Add remaining canned ingredients (kidney beans, pinto beans, tomatoes, corn, green chiles)
  6. Cook until soup is hot. (if you cook down the liquid, you can more easily make romaine lettuce wraps with the soup)
  7. Serve with Romaine lettuce leaves

Been doing #slowcarb for about 3 weeks now and I was looking for an alienating to my chili. Thanks so much for this , it’s right up my alley.

Sorry. Auto-correct made “alternative” into “alienating” for some reason

    Super dumb question…
Where does the liquid come from???
Does it come from the can of tomatoes ?
    Or do you add water

    • Eric Oliver

Heya! The liquid comes from the canned beans (we recommend not draining them) and the canned tomatoes 🙂 Thanks!
