Acorn squash is a fantastic fall squash that you can use the same way as a butternut squash. While some people don’t consider it 100% slow carb friendly because of its higher sugar content, I believe that since it has a low glycemic load and lots of other nutritional perks, it’s fine for slow carb. Personally, I think it’s a fantastic way to get a bit of a sweet fix without downsides.
