White Beans With Tomato and Sage

Super easy, super quick, and has a great Mediterranean flavor. For me, Italian flavors have a "comfort-food" association in my mind, so this is a great side dish for when I'm getting that craving. You can even grill a chicken breast, chop it up, and mix in at the end for a more hearty main dish.

Drain the beans and the tomatoes.

Heat the oil in a large skillet over medium high heat. Add the garlic and cook till fragrant, about 30 seconds to one minute. Add the tomatoes and sauté for 10 minutes.

Add the means and half the sage (if using dried sage, add all of it), season with salt and pepper, and cook for 10 minutes more.

Sprinkle the remaining fresh sage over the top - you're done!
