OK - I know I posted a slow carb breakfast recipe with peas and prosciutto, but it's such a good combination that it deserves a place at lunch and dinner too! This recipe uses butter and just a hint of mustard to elevate these simple ingredients from good to truly luxurious. It makes a fantastic side dish to a grilled steak or other hearty meat dish.
Heat oil in a large skillet until shimmering. Add garlic and sautée until aromatic, about 30 seconds. Add prosciutto and cook until it starts getting crispy. Add peas, chicken broth, and mustard. Stir well so that the mustard becomes completely blended. Bring to a boil and cook until the peas are just barely done (err on the side of underdone!).
Remove the pan from heat and add the butter. Stir until the butter is melted and incorporated into the sauce. Serve immediately.
